docs-only: fix stale text in canvas-audit-items.md

PR #182 (Arrow keys keyboard node drag) merged to main but the "Node Rendering" and "Drag and Drop" body sections still read "mouse only, no keyboard alternative yet" / "Keyboard alternative: None".

Fixes the body text to reflect the keyboard-accessible node drag. The "Remaining Gaps" table was already correct (marked done) — only the descriptive body text was stale.
